I recently brought this cake to a diabetic convention and handed out samples. Of course, I ate some cheesecake myself. This sugar-free cheese cake brought back memories of the cake my grandmother used to make. Totally creamy and out-of-this world. Just like it's supposed to be.
All our cheese cakes are "flash-frozen" immediately after they are taken out of the oven. They are placed in special shipping containers made from a type of thick styrofoam designed to safely ship the cake. The inside of the top lid has an indentation that holds a square ice pack. The indentation is just big enough to hold the ice pack in place.
For the the Diabetic Convention I attended in June 2008, I placed my order with the bakery and the cake was shipped out via overnight delivery. I opened the package when I came home, about 6 PM on the day after the cheese cake was shipped. And yes, we had a heat wave here in California (fires, too - June 2008). The ice pack wasn't totally frozen to a block - I could touch the little square and made little indentations - still cold enough. Because the ice pack did get a little softer, the pack rested on top of the cheese cake. It didn't leave an indentation on the cake itself.
I took the cake to the diabetic convention on the next day and everyone raved about how good the sugar-free cheese cake tasted!
